Chicken Noodle Soup

Ingredients:

  • 1/2 tbsp. Butter
  • 3 Ribs Celery
  • 4-5 Large Carrots
  • 1 Medium Chopped Onion
  • 10 c. of chicken stock or both (homemade is the best!)
  • 2 tbsp. Lizzy B’s Grandpa Dave’s Original
  • 3 c. of Egg Noodles or Other Pasta Choice
  • 3 c. of Cooked Chicken Chopped or Shredded (smoked, baked, or rotisserie are great choices)
  • 1 c. Other Vegetables of Your Choice (Optional)

Instructions:

Add butter, diced celery, onions, and carrots to a large stock pot over medium-high heat. Sauté for 3 minutes. Add chicken stock and season with Lizzy B’s Grandpa Dave’s Original Seasoning. Bring broth to a boil and add the noodles, chicken, and vegetables. Cook until noodles or vegetables are done. Be careful not to overcook the noodles, as you don’t want them too mushy. If you want to keep it keto, substitute the noodles with 3-4 cups of veggies. You can use any combination of the following vegetables: broccoli, green beans, tomato, cauliflower, spinach, cabbage, peas, corn, mushrooms, zucchini, or any other vegetable you like.

Texas Twinkies

Ingredients:

  • 1 lb. Chopped or Shredded Brisket from the fatty side (Smoked is the best!)
  • 1 1/2 – 2 tbsp. Lizzy B’s Brisket Rub
  • 1 c. Grated Pepper Jack Cheese
  • 8 oz. Cream Cheese
  • 2 packages of bacon (About 24 Strips)
  • 14 Large Jalapeno Peppers

Instructions:

In a bowl or food processor (Food processor works best and is fastest) combine the cream cheese, shredded cheese, brisket, and Lizzy B’s Brisket Rub. Pulse several times to combine and mix well. Chill the mixture while you prepare the jalapeños.

For the jalapeños, cut in half from the stem all the way down tot he tip with a sharp paring knife. Use a small spoon with a sharp edge to scrape the seeds and ribs from the pepper. Wash hands after handling jalapeño seeds and ribs.

Fill each half of the jalapeños with the filling to nearly overflowing, then wrap each with bacon starting at the stem and wrapping to the tip. Use toothpicks to secure bacon to the jalapeños. Cook at 375 for 35-50 minutes (depending on the size of the twinkies). Broil for a few minutes to crisp up bacon if needed.

Purple Hull Pea Hummus

Ingredients:

  • 3 Cups Shelled Purple Hull Peas
  • 1 Onion
  • 4 Pieces of Bacon
  • 5 cups Water
  • 1/4 c. Lizzy B’s Seasoning – Grandpa Dave’s Original

Instructions:

Chop an onion and add the bacon to a pot. Sweat the onion with the bacon for 4-6 minutes, the bacon is not meant to crisp up. Add the purple hull peas, Grandpa Dave’s seasoning, and water. Stir and cook at a simmer for around 2 hours or until the peas are soft. You may need to add water during cooking, you do not want the peas to cook dry. When peas are soft, pull out the bacon and pull off most of the excess broth. Do not discard the broth. Blend the peas with an immersion blender or regular blender until smooth. Add reserved broth if needed to achieve a good hummus consistency. Let cool and enjoy on crackers, with vegetables or however you like your hummus.

Chicken Salad

Ingredients:

  • 4 cups chopped chicken breast
  • 1/2 cup chopped onion (small)
  • 1 cup mayonnaise
  • 1/2 cup chopped celery (small)
  • 1 tablespoon horseradish sauce
  • 1 1/2 Tablespoons Lizzy B’s Seasoning – Grandpa Dave’s Original.

Instructions:

In a large bowl add all the ingredients and stir together until well combined. Taste it and judge for yourself about the quantity of mayo, horseradish and Grandpa Dave’s for your own tastes. Let it sit in the refrigerator for several hours so the flavors can marry-up. When we make this we use chicken that has been rubbed with Grandpa Dave’s and smoked. The smoked flavor just makes it that much better.

Meatballs

Ingredients:

  • 2 lb. Hamburger
  • 1 1/2 lb. Ground pork
  • 2 eggs
  • 1/3 cup milk
  • 3/4 cup breadcrumbs (or ground pork rinds)
  • 1/2 cup parmesan cheese
  • 1/4 cup Lizzy B’s Brisket Rub

Instructions:

Mix all ingredients and use your hands to blend together until well combined. Roll the meat into 3/4 inch balls and place on a cookie sheet with sides or a pan that allows the grease to drip away. Cook at 350 in an air fryer for a total of about 8 min. Check them at 5-6 min. You may need to rotate the pan and can check on doneness. * If you make larger balls you will need to cook longer. * You can make these in a regular oven at 350, just cook them longer. * You could also make into a meatloaf just add the veggies you like such as onion, peppers, etc.

Better Than Ranch Dip

Ingredients:

  • 1 1/3 cup of mayo
  • 1/3 cup of sour cream
  • 1/3 cup of buttermilk
  • 1 1/2 tablespoon. Lizzy B’s Seasoning — Grandpa Dave’s Original.

Instructions:

Mix all ingredients together in a small bowl, chill and set for 2 hours before serving.
